- 5 oz frozen spinach, thawed and chopped
- 3 eggs
- 2 1/2 cups flour
- 1 tsp salt
- Squeeze water out of spinach.
- Combine spinach and eggs in food processor, puree until smooth. Add flour and salt.
- Knead the mixture until smooth. Cover with plastic wrap and let rest for 20 minutes.
- Cut pasta into desired shapes
- Cook pasta for 2 minutes and serve with olive oil.
