Ingredients

    Cake

  • 2 cups flour
  • 2 tsp baking powder
  • 2 tsp baking soda
  • 1 1/2 tsp cinnamon
  • 1/2 tsp ginger
  • 1/4 tsp nutmeg
  • 1/2 tsp salt
  • 1 1/2 cups brown sugar
  • 1/2 cups white sugar
  • 1 1/4 cups applesauce
  • 4 large eggs
  • 2 tsp vanilla
  • 4 large carrots

    Cream Cheese Frosting

  • 8 oz cream cheese
  • 1/2 cups unsalted butter
  • 4 cups powdered sugar
  • 1 tbsp milk
  • 1 tsp vanilla

Recipe Instructions

  1. Preheat oven to 350F. Grease a 9×13 pan. 
  2. Stir together flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.
  3. In Artiste, mix together oil, eggs, brown sugar, white sugar, applesauce, and vanilla. Grate the carrots with the slicer shredder. Mix in until well combined.
  4. Pour dry ingredients into wet ingredients and mix until just combined.
  5. Pour the cake batter into the prepared pan. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Let cool.
  6. In Artiste, beat cream cheese until smooth. Add butter and mix again until smooth. Add in powdered sugar and vanilla, mixing until combined. 
  7. Frost cooled cake.
