Crepes
- 3/4 cup Fresh ground whole wheat flour spring white wheat is best (sift out bran for this recipe)
- 3/4 cup Soy milk or milk of choice
- 2 Eggs
- 1 Tbsp Honey
- 1 Tbsp Olive oil
- Dash of Cinnamon
Recipe Instructions
Combine ingredients in blender and process 1 minute. If time allows refrigerate about 30 minutes to 1 hour. Brush bottom of a 6″ nonstick skillet or crepe pan with oil or butter. When pan is hot pour about 3 Tbsp batter into hot pan. Tilt pan in all directions until batter covers pan in a thin film. Cook crepe 1 minute. Turn or flip crepe and cook additional 30 seconds on other side.
