  • 1 3/4 cups all purpose flour
  • 2 tsp fresh yeast
  • 2 + 1 yolk eggs
  • 2 tbsp heavy whipping cream
  • 3 tbsp unsalted butter
  • 3/4 cup milk
  • 1 pinch salt

Recipe Instructions

Heat the milk until slightly warm. Separate the eggs. Dissolve the yeast in 3 tablespoons of milk. Put the flour, salt, egg yolks, and dissolved yeast in the bowl with the dough blade. Blend for 30 seconds then, with the machine running, gradually add the lukewarm milk via the feed tube. Transfer to a large bowl, cover with a tea towel and leave to rise for 3 hours at room temperature. Next, place the egg whites in the bowl with the whisk and process for 10 minutes until they form stiff peaks. Gently fold the cream into the batter, then the egg whites. Cook the crepes in a well-buttered heavy-based frying pan over high heat.

Serve with lemon and powdered sugar or honey and berries.
