Turkey Noodle Soup

Ingredients

    Noodles:

  • 1-1/4 cup flour
  • dash of salt
  • 1 egg
  • 1/4 cup milk
  • 1/2 Tbsp butter, softened

    Soup:

  • 2 Tbsp olive oil
  • 1 carrot, sliced
  • 2 stalks celery, sliced
  • 1 yellow onion, diced
  • 2 garlic cloves, minced
  • 9 cups turkey broth
  • 2 cups uncooked egg noodles
  • 1/2 tsp sage
  • 1/2 tsp rosemary
  • 1/4 tsp thyme
  • 1/2 tsp oregano
  • salt and pepper
  • 2 cups cooked turkey, shredded

Recipe Instructions

  1. Add the flour, salt, egg, milk and butter to mixer. Mix until smooth. Let dough rest for 10 minutes.
  2. Feed through pasta roller to 1/4 inch thickness. Feed the sheet of pasta through the fettuccine cutter. Let noodles air dry for 30 minutes.
  3. Add oil, carrots, celery, and onions to a large pot. Saute over medium-high heat or until vegetables soften.
  4. Add the garlic and saute until fragrant.
  5. Add the broth and seasonings. Bring to a boil for 5 minutes or until vegetables are tender.
  6. Add the noodles and additional water as necessary. Boil 3 to 4 minutes or until noodles are al dente.
  7. Add the turkey and boil for 1 to 2 minutes.
