Preheat oven to 350F. Grease and flour two 8” cake pans.
Whisk together eggs, oil, buttermilk, vinegar, butter, vanilla and food coloring.
Sift together flour, sugar, baking soda, cocoa powder and salt.
Add in the liquid mixture and mix on speed 2 until just combined.
Divide batter into cake pans and bake 35-40 mins.
Beat together cream cheese, butter and vanilla for 3 minutes or until smooth. Add powdered sugar and beat for 2 minutes or until frosting is light and fluffy. Add more powdered sugar if necessary to reach desired consistency.
