Chocolate mousse

Product Used

  • 7 oz semi-sweet chocolate
  • 4 tbsp granulated sugar
  • 4 eggs
  • 1 salt

Recipe Instructions

Melt the chocolate in a bain-marie*. Separate the eggs. Put the whites and salt in the bowl with the egg whisk. Whisk for 5-10 minutes, making sure you have removed the pusher from the feed tube. Transfer to a large bowl and set aside. Put the sugar and chocolate in the bowl fitted with the metal blade, pulse 3 times, then add the egg yolks and blend for 10 seconds. Fold this preparation gently into the egg whites, using a spatula. Chill for at least 3 hours. Serve chilled.
