Could peppermint oil be used in place of or add to the vanilla?
Yes, that may give it a very strong flavor. I would recommend starting with a few drops or 1/8th teaspoon alongside the vanilla.
What attachment are you using to beat the syrup/egg white mixture? It seems like the wire whips wouldn’t be able to handle the stiffness of the ccs day as it thickened.
We used the wire whips for this recipe. However once the whites have been whipped you could swap to the cookie paddles.
