Cranberry Macadamia Bar Cookies

  • 1 1/4 cups Unbleached flour
  • 3/4 cup Sugar
  • 1/2 cup Butter
  • 1/2 cup Macadamia nuts (finely chopped)


  • 1 1/4 cups Sugar
  • 2 Eggs
  • 2 Tbsp Milk
  • 1 tsp Orange zest
  • 1 tsp Vanilla

Recipe Instructions

In Bosch mixer with cookie paddles, combine flour and sugar. Using “M” (momentary) switch, cut butter into flour mixture until it resembles coarse crumbs. Stir in macadamia nuts. Press mixture into bottom of ungreased 9″x13″ baking pan. Bake in 350° oven for 1-15 minutes or until crust is light brown around edges. Prepare filling: combine sugar, eggs, milk, zest and vanilla. Pour over hot crust. Sprinkle topping of 1/2 cup macadamia nuts (finely chopped) nuts, 1 cup cranberries (finely chopped) and 1/2 cup coconut over filling. Bake at 350° for 30 minutes or until golden brown. Cool Slightly in pan on wire rack. Cut into 24 bars. Cut each bar in half diagonally while warm. Cool completely to serve.
