Banana – Carob Bars

  • 1 cup Small dried banana pieces
  • 1/2 cup Milk
  • 1 tsp Cinnamon
  • 1 cup Flour
  • 1/2 tsp Baking soda
  • 1/2 tsp Baking powder
  • 1/4 cup Melted butter or margarine (melted)
  • 1/2 cup Honey
  • 1 Egg (beaten)
  • 1 cup Bran
  • 1 cup Carob chips
  • 1/2 cup Raisins (optional)
  • 1/2 cup Nuts (optional)

Recipe Instructions

Place banana pieces, milk and cinnamon in small bowl and let sit 15 minutes to rehydrate bananas. In large bowl sift together flour, baking soda and baking powder. Stir in melted butter or margarine, honey and beaten egg. Add bran, carob chips, rehydrated bananas and milk. If desired, stir in raisins and/or nuts. Pour into greased and floured 9″x13″ pan and bake in 350° oven for 30 – 35 minutes.

Note: Chocolate, butterscotch, peanut butter or int chips may be substituted for carob chips.
