Chelsea's Cinnamon Rolls

“I found this recipe years ago, and the first time I made them, I didn’t follow the directions correctly, and it made them even better! It’s now one of my best selling items on my Holiday menus.”

Ingredients

    Roll Dough

  • 1 1/2 Tbsp yeast
  • 1 1/2 Tbsp sugar
  • 1/2 cup water
  • 1 stick unsalted butter
  • 3/4 cup granulated sugar
  • 3/4 cup milk
  • 1 egg
  • 4 cups flour
  • 1 tsp salt

    Cinnamon Sugar Filling & Icing

  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 3 Tbsp cinnamon
  • 1 stick unsalted butter
  • 8 oz cream cheese
  • 2 sticks unsalted butter
  • 4-5 cups powdered sugar
  • 1 tsp vanilla extract

Recipe Instructions

1. Combine yeast, sugar, and water in your mixing bowl. Let sit for 7-10min or until it doubles in size. Melt 1 stick of butter while you wait.
2. With a dough hook, turn on mixer and mix in this order: 3/4 c milk, 1 stick of melted butter, 1 egg, 3/4 c granulated sugar, 4 c flour, 1 tsp salt. Let mix on low-med speed for 7 minutes. Cover with a towel and let rest for one hour or until it doubles in size. (Punch down 30 minutes in between so it will grow more!).
3. Once the dough has risen, melt your other stick of butter, mix your brown sugar, granulated sugar, cinnamon, and melted butter.
4. Roll out your dough into a rectangular shape about 1/4 in thick. Spread cinnamon paste all over! Roll from the bottom up into a spiral. Cut 12 rolls from the “log”. Place spiral up into baking pan and cover. Let rise and double in size for another 45 minutes-1 hour.
5. Preheat your oven to 350•. Once your rolls are doubled, bake for 20-30 minutes. Cover with foil during baking if they get golden before they are done(you can test readiness with a knife between the rolls).
6. While the rolls are in the oven, mix the cream cheese, vanilla extract, and butter together in a mixer with a paddle attachment until combined. Slowly add powdered sugar.
7. Once rolls have finished baking, either hot or cool(your preference!), ice them with the cream cheese icing.
8. ENJOY! Only eat one at a time cause you’ll be tempted to eat the whole pan.
