Dee Ann Goertzen – Pleasant Hill Grain
- 3 1/2 cups Hot tap water
- 5 cups Whole wheat flour
- 1/2 cup Canola oil
- 1/2 cup Honey
- 1 heaping Tbsp Salt
- 1 heaping Tbsp Kitchen Resource Dough Enhancer
- 1/4 cup Kitchen Resource Vital Wheat Gluten
- 1/2 cup Dry milk
- 2 Eggs
- 3 heaping Tbsp Saf instant yeast
- 4-6 additional cups Whole wheat flour
In Bosch bowl combine water, honey, oil, gluten, dough enhancer, powdered milk and slightly beaten eggs. Put in 5 cups of flour and mix 30 seconds on speed 1. Add 1 cup flour and yeast. Put yeast on top of flour. Mix on speed 2. Add salt, then quickly add remaining flour in 1/2 cup increments until dough cleans sides of bowl. Knead on speed 2 for 7 minutes maximum.
Roll out dough on greased surface. Spread butter and sugar generously on dough. Sprinkle with cinnamon. You can also add chopped nuts, raisins or dried fruits. Roll up dough and cut into 1 ” slices with a piece of waxed dental floss or a serrated knife. Put 12 rolls into greased 9″x13″ pan. Raise in warm place ith towel over top for 30 minutes to 1 hour. Bake at 375° for 20-30 minutes. Frost. Makes 3 dozen rolls.
