Mexican Street Corn

  • 3 ears of corn
  • 3 Tbsp mayonnaise
  • 1 Tbsp sour cream
  • 1/4 tsp garlic powder
  • 1/2 cup cojita cheese
  • 3 Tbsp cilantro
  • 1/2 tsp smoked paprika
  • 1 lime

Recipe Instructions

  1. Bake corn with husks on at 350F for 35-40 minutes.
  2. While corn is baking, combine mayonnaise, sour cream and garlic powder. Set aside.
  3. Once corn has finished baking, spread the mayonnaise mixture onto the ears of corn. Sprinkle with cojita.
  4. Top corn with cilantro and paprika before serving.
