Carnitas Tacos

Ingredients

    Carnitas

  • 3-4 lb pork shoulder roast
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/4 tsp cinnamon
  • 1 tsp oregano
  • salt and pepper
  • 3/4 cup orange juice
  • 2 limes
  • 4 garlic cloves, minced
  • 1 onion, chopped

    Pico De Gallo

  • 5 roma tomatoes
  • 1/2 red onion
  • 1 jalapeno
  • 1/2 bunch cilantro
  • 3 garlic cloves
  • 1/2 lime
  • salt and pepper

Recipe Instructions

  1. Place the pork roast in a crockpot. Add all of the ingredients and set to low for 8-10 hours.
  2. Remove meat and place in bowl of Bosch mixer. Using the wire whips, pulse the meat until shredded. Place shredded meat on a cookie sheet. Broil for 5 minutes.
  3. For the pico de gallo, add tomatoes, onion, and jalapeno to a food processor. Pulse until ingredients are just chopped. Add cilantro, salt and pepper and lime juice. Pulse once or twice until combined.
  4. Fill small tortillas with pork, pico, avocado, cojita cheese and any other desired ingredients.
