Black Bean & Rice Wraps

  • 1 lb Black beans (soaked overnight)*
  • 1 tsp Salt
  • 4 cups Cooked rice (2 cups uncooked)
  • 3 Green onions (diced)
  • 2 Tomatoes (cut into small pieces)
  • 1/2 lb Cheese (grated)
  • 2 Avocados (cut into small pieces)
  • Sour cream
  • Salt (to taste)
  • Lime (cut into half, then thinly sliced)

Recipe Instructions

Place soaked beans and 1 tsp salt in pressure cooker. Cover with water. Bring pressure up to high. Reduce heat to low and cook for 25 minutes. Place layer of rice on soft tortilla. Then layer beans, cheese, tomatoes, avocado and onion. Sprinkle with salt and twist of lime and top off with sour cream. Wrap up tortilla.

*Quick method (no time to soak beans)

Place beans in pressure cooker. Cover with water. Bring pressure up to high. Reduce heat to low and cook for 5 minutes. Release pressure and rinse beans. Return beans to pressure cooker and cover with new water. Add 1 tsp salt. Bring pressure back up to high. Reduce heat to low and cook for 25 minutes.
