Cheese Potatoes

  • 1 Small onion diced
  • 30 ounces Potatoes, parboiled and shredded
  • 1 can Cream of chicken soup
  • 1 cup Sour cream
  • 1 tsp Salt
  • 1/2 tsp Pepper
  • 2 cups Shredded cheddar cheese
  • 1 1/2 cup Crushed cornflakes
  • 1/4 cup Butter, melted

Recipe Instructions

Preheat oven to 350°F. Shred cheese and potatoes with the Bosch food processor. In large bowl, mix onions, shredded potatoes, soup, sour cream, salt, pepper and cheese. Add to 9×13 pan sprayed with cooking spray. Top with cornflakes and drizzle with butter. Sprinkle over casserole. Bake 50-60 minutes or until cooked and bubbly.
